About Food and Beverage Service
Welcome to Food and Beverage Service. Good service looks effortless to a guest, but it rests on a lot of knowledge: which glass goes with which drink, how a cover is laid, how a team divides its work. I write this blog to explain that knowledge clearly, the way a senior colleague would explain it on your first week in a restaurant.
What this blog covers
- restaurant service equipment: crockery, cutlery, glassware, flatware and hollowware
- types of food service, from French and Russian service to buffets and room service
- the organisation of the F&B department and the role of each team member
- qualities, grooming and etiquette expected from waiters and stewards
- F&B service interviews and career growth from steward to restaurant manager
The blog is written for hotel management and IHM students, trainee stewards and waiters, and restaurant staff preparing for interviews or promotion.
Who runs this blog
I am Sumit Manwal, a hotelier from Dehradun, Uttarakhand, with more than 20 years in the hospitality industry. In 2017 I founded Hospitality Vacancy, a job platform that connects hotel professionals with hotels, resorts and restaurants in India and abroad. My work has been recognised with the Excellence in Hospitality Sector of Uttarakhand award (January 2023) and the Dainik Jagran inext Uttarakhand Ratan Samman for Excellence in Hospitality & Education (2023).
Through Hospitality Vacancy I talk every week with students, job seekers and hiring managers. That daily contact shapes what I write here: the questions people actually ask, the mistakes freshers make, and the skills hotels say they cannot find.
How I write
- I explain each topic with the practical restaurant context, not only the textbook definition.
- Tables and checklists make equipment and service sequences easy to revise.
- House standards differ between hotels; where they do, I say so.
- Career advice is general guidance based on industry experience, not a promise of a job.
